We tried the pork dumplings-pan fried, they were delish. The Bento box was good, everything was fresh and hot. They will bring more sauce if you need it.
Overview
Walking into Kume Japanese Cuisine: Sushi & Hibachi for the first time feels like stumbling onto a neighborhood secret that everyone should know about. Tucked along 100 Wilson St, Oak Ridge, TN 37830, United States, this spot blends the comfort of a local diner with the precision and flair of Japanese cooking. I’ve eaten here more times than I can count, usually after a long workday, and the consistency is what keeps pulling me back. From the moment you sit down, there’s a sense that the kitchen takes pride in every plate that leaves the counter.
The menu is where the personality really shows. If you’re a sushi fan, the variety alone can slow you down. Classic rolls sit comfortably next to more creative combinations, and the fish quality is noticeably fresh. According to seafood handling guidelines published by the U.S. Food and Drug Administration, proper temperature control and sourcing are key to safe raw fish service, and you can taste that care here. The rice is seasoned just right, not overly sweet, and the balance between fish, rice, and nori feels intentional rather than rushed. One of my go-to orders is a simple salmon roll paired with miso soup; it’s a reminder that basics, when done well, can outshine flashy alternatives.
Hibachi is the other half of the experience, and it’s more than dinner-it’s dinner with a show. Watching the chef work the grill, timing each flip and chop, gives you an appreciation for the skill involved. Culinary institutes like the Culinary Institute of America often emphasize knife skills and heat control as foundations of professional cooking, and you see those principles in action here. The vegetables come off crisp but tender, the meats are juicy, and the fried rice has that smoky depth that only a hot grill can deliver. I once brought a group of coworkers who had never tried hibachi before, and by the end of the meal, they were already planning their next visit.
What stands out just as much as the food is the service. Staff members remember faces and favorite orders, which adds a layer of trust you don’t always find in busy restaurants. Reviews from regulars often mention how welcoming the atmosphere feels, and that lines up with my experience. Even on crowded nights, the flow stays smooth, and you never feel forgotten. That kind of operational consistency is something restaurant management studies frequently highlight as a driver of customer loyalty.
There’s also value in how approachable everything feels. Japanese cuisine can sometimes seem intimidating to newcomers, but here it’s explained in plain language. If you’re unsure about raw fish, servers will suggest cooked rolls or hibachi options without judgment. That openness matters, especially for families or diners exploring new flavors. I’ve overheard staff describe dishes using phrases like fresh flavors and simple comfort, which perfectly capture the vibe without overselling it.
Location plays a role too. Being right in Oak Ridge makes it an easy stop for locals, and parking is straightforward, which is a small detail that ends up meaning a lot. While I can’t speak for every single dish on the menu, the range I’ve tried-from sushi platters to steak hibachi-has been reliably solid. The only limitation I’ve noticed is that peak hours can mean a short wait, but the payoff is worth it.
Kume Japanese Cuisine: Sushi & Hibachi manages to balance quality, approachability, and genuine care in a way that feels authentic. It’s the kind of place where you don’t just eat; you relax, talk, and leave already thinking about what you’ll order next time.

The outside isn't much to look at, and the decor is minimalist, but that doesn't hurt the food. Spring Rolls: Small crispy and tasty. They are the typical rolls, but well done. Sushi: Dragon Roll. The outside tempura was too thick. The inside was good and tasted fresh, it just needs less breading. Hibachi Steak & Chicken: Steak was cooked as asked ( medium), Chicken was tender and seasoned. Pros: Good food, prices, service Cons: Limited seating, limited parking
I was in Oak Ridge today on business and thought I would try one of the Asian restaurants I had not yet tried. I was pleasantly surprised by Kume. I ordered the hibachi chicken bento box. The chicken was very nicely done… Very tender with good flavor. The roll was good and that's going some for me because I don't usually eat them. The spring rolls had good flavor and good texture. The service was pleasant and quick. I will definitely go back to try something else. The next time I am over that way. By far the best Asian cuisine I have had so far in Oak Ridge and I think this makes the fourth restaurant I have tried. It earns my, "OK… That was decent… I will try that again" seal of approval.
Amazing diamond in the rough!!! Sushi was perfect and very reasonably priced.
Clean facilities. Great service. Although it's a little dark inside. They really need to illuminate better. Food was hit and miss. The tofu was amazing. The eel was superb. The shrimp was overcooked. Overall, it's a good dining experience.
Visiting this place is always highlight of my trips to Oak Ridge. The Tennessee roll is my absolute favorite. The sushi is always delicious and fresh. The service is always impeccable and efficient. Everything is always clean, the music is never annoying. Every guest I've brought has had a wonderful meal. I definitely recommend if you love sushi. Thank you!
This place does not need another 5 star review but they are actually that good. Sushi is flavorful and filling. The hosts were very accommodating. Would come back
I really enjoyed my Hibachi lunch special! It was steak and shrimp with vegetables, rice, and a side salad. The price was low for the amount of food I had and delicious too. The service was great also. I will definitely look forward to my next meal here.
